I used to be in a fitness class and used to be pretty good at this but can't figure this out and need a little help...
I'm wanting to run 4-5 days a week
I also want to work in a lower body workout, upper body and core. for example my schedule would look like:

Monday: run and lower body
Tuesday: run
Wednesday: off
Thursday: run and upper body
Friday: off
Saturday: run and core
Sunday: run

Does this seem like it'd be a decent workout on a weekly basis and make a difference in my fitness?

First, any kind of exercise you do is good for you, provided you are not overdoing it. Start slow and build up. Your body should respond with increasing endurance, so you will need to adjust your schedule. Most fitness experts I have come across suggest working out everyday for the sake of maintaining your habit at the very least, so I would still schedule a workout on Wednesday, if only a lighter or shorter one. Lastly, you might get bored doing this schedule every week eventually. You may want to consider ways to change it up to keep you interested. (This is my main problem with exercise; I find it so boring.) Good Luck.

That all sounds good but make sure if you're going to be doing heavy squats you don't run beforehand and instead run after because it's dangerous to squat when exhausted.

the only thing to change would be the two rest days, space them out a little more. switch tuesday and wednesday or friday and saturday

Perfect! Maybe the 2 days you are not doing anything you can go for a walk. (up hill)
